A Middle Eastern restaurant inspired by the Arabian Peninsula and the Levant. Rich in hospitality, generosity and story. Designed to feel warm, elegant and full of life. The restaurant had the look. It had the food. It had the ambition.
What it needed was the operational backbone to make it work in London.
The Brief
Noreen’s founder had a clear vision for the restaurant and a long-term ambition to establish a serious hospitality brand in the London market.
Auden worked with the founder for over two years to help bring that vision to life.
In the early stages, the work focused on financial planning, market fit and shaping the product for the local audience. As the opening approached, Auden moved into full pre-opening support, covering training, systems, operational set-up, marketing readiness and the management of Auden’s 800-task pre-opening checklist.
Once open, Auden continued to support the restaurant on the floor, working with the management team and leading the operation when the owner was overseas.
This was not just about opening a restaurant.

London is not short of beautiful restaurants. Design alone is not enough. A strong concept still needs local relevance, commercial discipline, team confidence and operational control.

Two Years of Shaping
The project did not start at pre-opening. Auden worked with the founder over two years, helping shape the financial plan, market positioning, food direction and operational thinking before the restaurant reached launch.
The Menu Had to Travel
The inspiration came from the Arabian Peninsula and the Levant, but the offer had to land in Marylebone. Auden helped shape the food and drink menu development so the restaurant felt authentic, generous and right for the local market.
Training Before the Pressure
Auden led pre-opening training focused on hospitality, leadership and sequence of service. The aim was not to over-script the team. It was to give them confidence, rhythm and a clear understanding of how Noreen should feel on the floor.
The Boring Bit That Wins
Systems, processes and financial controls are not the glamorous part of opening a restaurant. They are the part that stops the business drifting. Auden implemented operational and financial SOPs so the restaurant opened with discipline from day one.
A London Market Entry
Noreen was the founder’s first step into the London dining scene. Auden advised on how to structure the business and operation for the UK market, helping the owner understand what needed to be in place for the restaurant to succeed.
