Whether you are looking for a place to eat in Hampshire, or rooms to stay in New Forest, this independent group has something to suit all needs.  From upscale dining to a great British pub, wherever you decide to eat you are surrounded by acres of breath-taking woodland, heath and home to the famous New Forest Ponies.

 Auden joined forces with Rockingham Partners, hospitality asset management experts to develop an F&B strategy for the group and individually for the hotels that would support them in their efforts to grow the collection’s performance.

The Project.

Our F&B Strategy Process.

When creating an F&B strategy, we always follow the same process as they conducted their exploratory phase of the strategy process and it was no different for the strategy created for the New Forest Collection.

We conducted a thorough three-day exploratory visit and spent time in each hotel understanding the F&B offering in each.  During this phase, our team spent time with the key stakeholders to learn from their knowledge of each business and understand their challenges.  By doing this across each hotel, the team were able to look at commonalities across the group that could be looked at as a collective strategy, an example of this was breakfast.  There was an opportunity to standardise the breakfast offer to increase quality and elevate the guest experience throughout the estate.

Finally, the team then explored the local area to understand the competition and find the hidden gems that the locals love to visit.  Doing this enabled us to curate a strategy that would be able to attract locals as well as the tourists who frequent the area.

Once back in the London HQ, the team then set out to research the digital footprint of the hotels to understand the opportunity of a detailed strategy to increase their presence online and list the outlets on the most common booking channels in the area.

 

Building the Strategy.

Once the exploratory phase was completed, the Auden team took all of the information and started to build the strategy.  The group strategy covered all aspects such as brand standards vs local framework, group supply chain and commissary opportunities and finally digital strategy.

The document then covered each hotel individually showing how each outlet worked with each other to form the hotel offer. 

The hotel strategy then covered the opportunities to generate further revenue by unlocking under-utilised spaces, reviewing how the meal periods work across the hotels and whether the F&B outlets impact the overall strategy of the hotel and how this could be overcome by thinking differently.

Presenting the Vision.

The final phase of the project was the presentation of the strategy to Rockingham Partners and the Hotel Owners.  Auden presented the analysis of the exploratory phase and online presence and shared the individual and group strategy for the hotels.
